(I'm a white chick with no Asian background whatsoever--if you know things about these recipes, please feel free to correct/improve on what I've got here!)

I love Thai food, and I particularly love peanut sauce--but whenever I've bought it at the store, it has almost no resemblance to the stuff at the Thai restaurants. I'd pretty much given up, but I was making a rice salad today and thought I'd give it a try. And it worked! I bastardized a recipe out of this book. Here's what I did:

Heat about a tablespoon of vegetable oil in a pan with several good shakes of turmeric, and red curry paste if you like it hot. When it starts to sizzle, plop in several spoonfuls of all-natural smooth peanut butter, some coconut milk, a little bit of fish sauce and a little bit of lemon juice. Stir until it emulsifies.

I'm not an amazing cook, so while this might seem a little plebeian, I'm pretty proud of it. :)

The rice salad, if you're interested:

1 English or Armenian cucumber
Handful shiitake mushrooms
1 small yellow onion or shallots
Baby shrimp, cooked (or not, if you don't eat them)
Dried arame seaweed
1 avocado
Rice
Mirin (rice cooking wine)
Rice vinegar
Spoonful of sugar

In the morning: Cut the cucumber lengthwise & scoop out seeds, then slice into 1/4" pieces. Cut onion and shiitake mushrooms into similar size chunks. Place in mixing bowl and cover with rice vinegar and mirin, stirring in spoonful of sugar. Cover and place in refrigerator.

Later: Add baby shrimp to the marinating veggies, re-cover and put back in the fridge. Soak arame in water about 15 minutes, then cook with the rice (I steam it in a pot on the stove--I don't know if you could put the arame in a rice maker or not). When rice is cooked, dish into bowls and let cool, then add marinated veggies/shrimp. Top with diced avocado & serve with peanut sauce.

That peanut sauce sounds delicious! You should try it on Gado Gado, which is delicious - but skip the potatoes![/url]
